To Die For Fresh Summer Salsa!

17 Aug

A couple of weeks ago our garden was so full of ripe tomatoes I was picking at least 4 a day. I have never had tomatoes coming out of your ears like this before so I didn’t know what to do with all of them. I knew I didn’t want to make a sauce and freeze it. That was boring. Well, I decided to be adventurous and make salsa. I have had homemade salsa before but never have I tried to make it myself. It was amazing! I started chopping tomatoes and adding a little of this and that and when I was done I wanted to die and go to heaven. Not only had I accomplished making it,  it tasted like a food from heaven and it wasn’t hard at all. I went to Memphis that weekend and told my family about it. My mom asked me to write down the recipe. Here it is, but when you make it, you should constantly taste it and don’t just go by the recipe. Everyone’s produce is different so everyone’s salsa will be a little different. I like mine to have a lot of garlic, cilantro, cumin, and if you don’t like salt and freshly ground pepper you might as well not make it (for me at least.) The one thing I really like about homemade salsa is you can eat a lot of it and feel really good about it. Adjust the recipe to your liking and enjoy! I will warn you that you might want to make it on a day when everyone is gone or else your salsa will be gone before you get any.

10 large tomatoes-perferably from your garden, diced

1 large red onion, diced

2 whole bulbs of garlic-or more 🙂 finely chopped

1 gr. bell pepper, diced

1 bunch cilantro, finely chopped

2 jalapenos, finely diced, seeds and all

1 lime juiced

chili powder

salt and pepper to taste

Combine all veggies add seasonings and for best results let sit overnight for the flavors to meld and become irresistible.

Side note: My sister made this salsa in the above pictures. Since I gave her my recipe she promised to take pictures for me that I could use.
